As going out for a coffee, often accompanied by something sweet, is not wise at the moment, I spoiled myself (and Daughter) by baking a cake. As today is as good as any other day for cake. Following my grandfather’s (a baker) recipe that my father taught me, I whipped and folded together a cake which competitors in The Great British Bake Off call a génoise sponge. Definitely not vegan. Definitely not healthy. Definitely delicious, though.
